White Chocolate Almond Fruit Bars

These delicious treats are a recipe I got from my cousin couple of years ago. They are fairly easy to make and so versatile. I’ve made it with blueberry, raspberry and strawberry. I bet peach would be delicious as well!  Give these a try and you will never go back to your plain ‘ol sugar cookie bars again.

 

White Chocolate Almond Fruit Bars

1 cup butter

2- 12oz packages of white chocolate chips

4 eggs – slightly beaten

1 cup sugar

1 1/4 teaspoon almond extract

2 cups all-purpose flour

1 tsp salt

1 cup blueberry (or any flavor) fruit spread

1/2 cup sliced almonds

In a saucepan, mlet butter over low heat. add 2 cups of the white chocolate chips and stir until melted.

Combine eggs and sugar. Add the butter and chocolate chip mixture to the eggs and sugar. Stir just until combined and then add in the almond extract.

Gradually add flour and salt and stir again, just until combined.

Spread half of the batter into a well greased 9×13 pan. Bake at 325 degrees for 15-20 min or until the edges are lightly browned. Remove pan from oven. Spread fruit spread over the top of warm crust.

Stir in 1 cup of the white chocolate chips into the remaining batter. Drop the batter in small mounds on top of the fruit spread, then sprinkle with sliced almonds.

Bake again for 35 minutes or until a toothpick inserted near the center comes out clean and the top crust is lightly browned. Cool on a wire rack and cut into bars to serve.

This is a VERY rich treat so we usually cut them into no bigger than 2 inch squares.
